Produced by boiling pure, fresh grape juice, in enormous vats, for hours, if not days, until about only a fifth of the original liquid remains. Petimezi, the healthiest sweetener in the world, is rich in antioxidants, vitamins A and B, minerals, potassium, iron, calcium and magnesium. It is commonly used in Greek and Mediterranean cuisine. The most common being to flavour “Mustokouloura” grape-must cookies, seen in all bakeries and patisseries at the time of the grape harvest, delicious, spicy, dark cookies, with rather a gingery flavour. Petimezi can also be used to marinate meat or for salad dressings.

Fleur de sel ("flower of salt") is collected on the surface of shallow salt water marshes and is scraped off with a special rake. The raking must be done carefully by hand in order to scrape only the top layer of salt before it sinks to the bottom of large salt pans. Greeks have harvested sea salt and fleur de sel along the Mediterranean sea coast, particularly the Mani Peninsula of Lakonia and Missolonghi. Fleur de Sel is a rare and expensive type of sea salt that is most favored by cooks due to its fine, light crystals that have a delicate flavor and high concentration of minerals, making them the perfect finishing salt.
